The Love Lies Bleeding Amaranth has dramatic tassels of wine-red blooms. Not only does it produce gorgeous cascading blooms, but it's also edible! Leaves can be eaten similarly to spinach and the seeds can be ground, sauteed into puffed amaranth, or boiled and used in many recipes.
